These little pretties are from our garden. I hate tomatoes but Kris loves them! They are so easy to grow and I love all of the different varieties. Ty and Tucker love to check on them daily and help me water!

Meet me at the Pool

Ty did a fantastic job today at his meet. He has so much fun and it is such great exercise. Next Saturday is our last meet and it is at the UT swimming pool. He is so excited!!!

I read this earlier and thought it was beautiful. I wanted to share it with you! Also, check out her cute blog!

"I think most people experience it, a feeling of being in limbo –times in which we have lost our sense of direction because we have left one thing and don’t know where to find the next. And then when you think, “ah, I’m here, I know,” in those moments you can almost be guaranteed that something will come along to put you in groundlessness, to pull the proverbial rug out. Maybe, the point is to stop striving for a place to rest comfortably, to have all loose ends tied, and to “know who you are.” Maybe what is really freeing or radical is to make friends with fluidity, to realize that change is only constant and that the tighter we grasp to an outcome or and idea of how things should be, the more we suffer when they are not that. As young people, we are always told what we should do or be doing. But the question ultimately is –what do I want to do? What makes my “heart sing”? And is it okay to not “know” but to still move forward anyway? Yes, of course!"

Spicy Zucchini Spaghettini

Spicy Zucchini Spaghettini

zucchini, julienned
pine nuts
red chili flakes
feta cheese, crumbled
fresh squeezed lemon juice
salt and pepper
olive oil

Heat olive oil in a large skillet on medium heat. Add zucchini and cook about 5 minutes. Season with salt and pepper. Add chili flakes to desired intensity, but don't leave this ingredient out because the heat makes this dish sing!

Cook spaghetti in salted boiling water until al dente. Drain, reserving ¼ cup pasta water. Add pasta to skillet with zucchini and heat for 1 minute, adding some of the reserved pasta water if too dry. Remove from heat, add feta, pine nuts and fresh lemon juice. Toss to combine and serve immediately. If you're looking for more substance in this pasta, shrimp and garlic would be great additions as well.

I would love to make this in the next couple of weeks!! Sounds Yummy!!!
